Abstract
Purpose: One of the objects in this study is to investigate the effect of high temperature preserved wheat sprout extracts on anti-oxidant activity. The other is to confirm the feasibility of the cream containing wheat sprout extracts as cosmetic materials.

Methods: We performed the anti-oxidant assay and skin clinical testing to check the anti-oxidant activity and the transepidermal water loss index, respectively.

Results: The anti-oxidant activity of wheat sprout extracts was decreased after the high temperature preservation than before. In the skin clinical testing of the cream with wheat sprout extracts, we found out that the cream restored the damaged skin barrier effectively by reducing the evaporation of skin.

Conclusion: Based on our findings, we suggest that wheat sprout extracts should be melted below 50 degrees Celsius to preserve the anti-oxidant activity. As the extracts reduced skin moisture loss effectively, wheat sprout extracts are considered having the potential as cosmetic materials.
